Dragonfruit Pineapple Gimlets

1: Boil water and add into a mason jar with coconut sugar. Stir until sugar is fully dissolved and set aside.

2: Prep your glasses by adding 1/4 cup of frozen dragonfruit into the bottom of each glass and fill the rest with ice.

3: Into the shaker, add your spirit of choice, lime juice, simple syrup, and pineapple. Muddle for 5-10 seconds.

4: Add 2 cups/handfuls of ice into the shaker and shake vigorously for 10-15 seconds.

5: With the metal strainer on the lid, evenly distribute the mixture into the prepped glasses.

6: Top with soda water and garnish with a lime slice and a leaf of cilantro. Enjoy immediately.
